What is that 2nd ingredient?
Sunflower Lecithin is an emulsifier that simply helps the egg powder dissolve in liquids. Typically egg whites and they don’t mix (like oil & water), so the Sunflower Lecithin assists the molecules in bonding to the egg white powder. This works best in milk or milk substitutes, plus you get the added calcium and flavor they provide. But don’t worry, the lecithin adds no flavor or nutritional value, and only a small amount (less than 1%) is added to the egg whites. It’s the Smart way.
